Where does chicken cordon bleu get its name?

While chicken cordon bleu gets its name from the French term for blue ribbon (denoting excellence), this dish actually stems from Switzerland.  The breaded chicken base is commonly known around the world as schnitzel.

A meal of schnitzel usually consists of a piece of meat, pounded thin, then breaded and pan-fried or baked.

What does Cordon Bleu stand for?

The French term cordon bleu is translated as “blue ribbon”. The blue ribbon is a symbol of high quality.

The association comes from The Blue Riband, a prize awarded for the fastest crossing of the Atlantic Ocean by passenger liners and, prior to that from Cordon Bleu, which referred to the blue ribbon worn by the French knightly Order of the Holy Spirit.

The spelling blue riband is still encountered in most English-speaking countries. But in the United States, the term was altered to blue ribbon, and ribbons of this colour came to be awarded for first place in certain athletic or other competitive endeavours.

Chicken cordon bleu recipe is a really quick and easy recipe to make for any weeknight. Cordon bleu means “blue ribbon” in French. It was worn by members of the highest order of knighthood. In culinary term, it applies to food preparation to a very high standard and to outstanding cooks. The origins of this dish are in Switzerland, though Americans claim it to be their innovation.

Chicken cordon bleu is traditionally a schnitzel or a flattened patty of meat layered with ham and swiss cheese, breadcrumbed and then deep-fried. However, keeping health in mind we are going to bake this chicken cordon bleu with some modifications that depend upon available ingredients.

Enjoy the goodness of these cheesy chicken hammed rollups. Simple stuff high in taste as a chicken cordon bleu bake.

Notes: I have used smoked salt but you can use regular salt. I have used freshly cracked peppercorns, however, you can use black pepper if peppercorns are not available. I usually use Nutrichoice crackers instead of breadcrumbs, however, you can use regular homemade breadcrumbs or panko breadcrumbs depending upon availability.

Remember to season the breadcrumbs with salt and pepper. The recipes all over call for using dijon mustard, however, I chose to use our local kasundi mustard.

Ingredients

  • 4 Piece Chicken Breasts Flattened to about 1/4 of an inch
  • 4 tbsp Mustard I used Kasundi; 1 tbsp per chicken breast
  • 4 Piece Ham Pork; 1 slice per chicken breast
  • 4 Piece Cheese Sliced or grated; your choice; 1 slice per chicken breast
  • 0.5 teaspoon Salt I used smoked salt
  • 0.5 teaspoon Pepper
  • 8 Piece Nutrichoice Crackers Instead of breadcrumbs; Pulsed
  • 2 Piece Eggs For dipping the rolls
  • 1 tbsp Soda Water
  • 1 tsp Extra Virgin Olive Oil To line the baking dish

Instructions

  • Preheat your convection oven to 200-degree celsius.
  • Coat the baking dish with olive oil and set aside.
  • Wash and pat dry chicken breasts. Cut it into half and spread it out like a fillet. Flatten to 1/4th of an inch. You can also flatten them by placing in a ziplock bag and pounding them with a meat mallet or rolling pin.
  • Place a chicken breast flat on a kitchen board and layer with one tablespoon of mustard and season with salt and pepper.
  • Place a slice of ham on top of the chicken, add a layer of cheese and roll. Set them seam side down.
  • In a bowl beat eggs with 1 tablespoon of soda water to make an egg wash. If not available replace with drinking water.
  • In another bowl add the pulsed nutrichoice crackers and season them. You can even grate some cheese into it.
  • Dip the chicken into the egg wash and then roll it in the crumbs coating thoroughly.
  • Place them into the baking dish seam side down and bake for 40 minutes.
  • Slice into discs and serve with a cucumber ribbon salad on the side.

Notes

  • Seal the corners with extra toothpicks to prevent cheese from oozing out. Though, toothpicks to hold the chicken closed on the ends are not really required.
  • Traditionally, this dish pairs well with Swiss cheese in it but you can use any cheese you like. And, you can also replace the ham with Prosciutto.
