Take 3 tablespoons of ghee and heat it up in a non stick pan or a skillet. If you have a cast iron kadai that works beat.

Add the almonds, pistachio nuts, cashew nuts & raisins and saute till slightly swollen. Then add the grated carrots and milk. Keep the heat on medium-low and keep stirring the delicious mixture.

Let the mixture reduce to almost one-third. This is the most tedious part of the process and requires your patience. You should continue to stir until the halwa reduces down to a fudge like smooth consistency.

Finally, add powdered jaggery (shakkar) or sugar & green cardamom powder to suit your taste and continue to cook the halwa for another 5 minutes (until the liquid from the sweetener has been absorbed).

  • 8-10 tablespoon Sugar or Jaggery Or according to your taste
  • 0.25 teaspoon Cardamom Powder

  • Keep stirring the halwa else the milk will cause it to stick to the base of the pan. This is also important so that the carrots cook uniformly.
  • Use red carrots to make this carrot halwa recipe. Black Carrots are available in some parts of India during winters and they build a great taste of this halwa. Obviously, the black carrot halwa will be blacker. :)
  • You can adjust the amount of sugar or jaggery to suit your preference.
