Grated carrots are painstakingly slow-cooked in whole milk until they are reduced to a soft, luscious and near melt-in-the-mouth consistency. The making of this halwa is a true labor of love, but well worth the effort.

Its luscious orange-red colour and exquisite taste are sure to impress those who try it.

Is carrot halwa good for health?

Carrots are loaded with vitamin A, vitamin C, vitamin K and fibre. Adding milk & khoya to the halwa adds calcium and protein to the dish.

The almonds, pistachio nuts, cashews and raisins add to the protein and antioxidants in your gajar ka halwa.

Vitamin A present in carrots improves your immune system, thereby shielding you from infections.

Beta-carotene is also present in carrots, which helps the skin by blocking the UV rays, which are usually active during winter.

How do I store gajar ka halwa or carrot halwa?

Gajar Ka Halwa can be stored for up to two weeks days in your refrigerator. Do not keep Gajrela in open for a time longer than 2 days. It will turn stale. You can also freeze the halwa for 1-2 months. Just transfer it in a freezer safe box and freeze. Simply, thaw before using.

Do I serve gajar ka halwa hot or cold?

Gajar ka halwa can be served hot or cold. It is best served as a rich dessert after meals. To serve carrot halwa cold, let it come to the room temperature and then refrigerate to cool nicely.

Why does gajar ka halwa turn black?

This suggests some burning or blackening of carrots over heat. If your grated carrot sticks to the bottom to the pan, it may discharge the burnt black residue. This might happen if you don’t stir the gajar ka halwa or gajrela while cooking it.

Remember to always use a non stick pan, steel or cast iron pan or kadai over aluminium kadai to cook carrot halwa as aluminium may cause discolouration when cooking for longer time.
