This is a delicious Punjabi pickle recipe where fresh green chillies are pickled with mustard seeds and lemon juice.

While making pickles often seems to be a daunting process not many take the risk. But, with the right and exact quantities of spices that make for a perfect taste the task is simply done.

And, this recipe really does not need much of a complex method or cooking or roasting that adds to the laborious task of pickle making.

Moreover, I have twisted the recipe a bit out here. Hence, instead of using mustard oil, I have used olive oil. The reason is simple, olive oil is a much gentler oil.

It is believed that those who regularly consume olive oil are less likely to develop cardiovascular diseases, including hypertension (high blood pressure), stroke, and hyperlipidemia (high blood cholesterol and triglyceride levels).

The usage of olive oil has made a great deal of difference in the final product.

Ingredients

  • 400 grams Hari Mirch / हरी मिर्च Fresh - Washed & dried
  • 5 Tablespoons Olive Oil / ऑलिव का तेल
  • 1/2 Tablespoon Fenugreek Seeds / मेथि दाना
  • 1/2 Tablespoon Cumin Seeds / जीरा
  • 5 Tablespoons Mustard Seeds/ तिल
  • 1 Tablespoon Fennel Seeds / सौनफ
  • 1 Tablespoon Nigella Seeds / कलोंजी
  • 1 Tablespoon Garam Masala / गरम मसाला
  • 1 Teaspoon Turmeric Powder / हल्दी
  • 5 piece Lemon Juice / निम्बू का रस
  • 1 Teaspoon Salt / नमक

Instructions

  • First, get all your ingredients ready as per the suggested measures.
  • Then, wash green chillies and chop them to about 5mm each.
  • Roast all whole spices in a pan without oil.
  • Once they are fragrant remove and powder them using a rolling pin.
  • Add oil to the pan and heat it up.
  • When it gets heated up remove the pan from the fire and add asafoetida and the powdered spices.
  • Further, add half the amount of lemon juice and mix well.
  • Add green chillies to this mixture and roll it carefully so that the chillis are evenly coated.
  • Finally, add the remaining lemon juice and put the pickle into a glass jar.
  • Sun this for 3-4 days and then you are ready to eat it with your meals.

Notes

  • Use medium spices chilli, or deseed the chillis to reduce the spiciness.
  • Make sure to roast the spices on low flame to prevent them from burning.
  • The green chilli pickle stays good for 3 months or more when refrigerated.
  • You may increase the amount of lemon, vinegar and oil to increase the shelf life of hari mirch ka achar.
  • This Instant green chilli pickle or hari mirch ka achar tastes great when served after three (3) days of resting.
