Patatas alioli is one of the first tapas dishes I made as I got on with making Tapas (classic small dishes from Spain). The inspiration came from Elisabeth Luard’s book called Tapas – Classic Small Dishes from Spain.
Patatas alioli recipe is simple, tasty, and easy to prepare. It’s also uncomplicated on ingredients and cook-time, which makes it a great recipe for a small dish.
If you are a garlic lover, alioli potatoes are made for you. Alioli (often aioli in English) is a traditional Spanish sauce combining garlic and oil.
Although the classic recipe does not include egg yolks, the recipe referred to here does, making the mixture easier to emulsify.
Patatas Alioli (not to be confused with Patatas Bravas), are one of Spain’s most popular tapas.
What is Aioli?
Aioli is an emulsion made with garlic and oil. This is obvious from its name as the term “aioli,” often spelled “allioli,” comes from “all i oli,” meaning “garlic and oil,” in the Valencian and Catalán languages.
Traditionally, alioli was made in this region in a mortar with a pestle using only garlic and olive oil with a little salt. No egg was used to help form the emulsion.
The garlic and salt are beaten into a paste with the pestle, and olive oil is added in, drop by drop, while continuously mixing it in a circular movement until an emulsion is formed.
As the emulsion builds up and gets thicker, drizzle in small amounts of oil at a time, continuing to incorporate it into the emulsion before adding more oil.
How do I make Patatas Alioli?
Patatas alioli is usually eaten as a tapa, not as the main dish, but it’s up to you. You can eat it as the starter, main dish and if you want, also as a dessert. It’s also a super simple recipe.
To make the aioli you just need to blend all the ingredients and then you only have to mix it with the boiled potatoes and garlic chives, add some extra salt and mix, that’s all.
It’s a perfect cold potato dish. It is refreshing and much lighter and easier to digest with some cold beer.
What do I serve Patatas Alioli with?
Most bars in Spain, serve patatas alioli tapas as a complementary side with drinks. It is easy to make, tasty and inexpensive.
Patatas Aioli are usually consumed cold or at room temperature, and mostly eaten as an appetizer. You could serve them as a side dish with some grilled fish or with meat roasts.
You can serve these even with eggs, for breakfast or brunch. Or mix boiled eggs in it and eat it as a salad.

Get your ingredients ready to make Patatas Alioli | Simple Homemade Patatas Con Aioli
Make your garlic mayonnaise alioli with olive oil.

Cut the boiled potatoes in bite size pieces
Add alioli or aioli to patatas and mix well coating the potatoes liberally. Garnish with garlic chives and serve.
Patatas Alioli - Homemade Patatas Con Aioli Recipe
Ingredients
- 500 gram Potatoes Patatas
- 1/2 cup Alioli or Garlic Mayonnaise
- 2 tbsp Garlic Chives Fresh & Finely chopped
- 1/4 tsp Sea Salt
Instructions
- Get your ingredients ready.
- Boil potatoes or patatas.
- Let them cool down completely at room temperature.
- Add the alioli and salt and stir to coat potatoes completely.
- Garnish with freshly chopped garlic chives.
- Keep in the fridge in a sealed container for at least one hour or until it’s cold.
- You can also serve patatas alioli immediately.
- Store in the fridge in a sealed container for up to 4 days.
Notes
- Try the patatas alioli before serving and add more salt if needed.
