Sum Ka Mutton Recipe – A Delicious No-Fuss Mutton Recipe

This simple, yet delicious version of goat curry or mutton curry recipe called Sum Ka Mutton is really easy to put together. And, you can use either goat meat or sheep. Sum Ka Mutton curry is delicious by itself and when served with plain rice, a salad, and raita.

Sum ka Mutton is a unique mutton curry recipe developed by me. It is rustic and decadent. There is no precedence of such a delicious mutton/ lamb recipe till now. I wanted a mutton dish that was no fuss and quickly made. So I began to play around with some raw ingredients available at home and got Sum Ka Mutton as a final result.

There are a few unique things about this mutton curry recipe. It doesn’t use any water. It uses water content from the meat and a lot of tomatoes that I use in it. Second, it uses a lot of fresh coriander that imparts its freshness & deliciousness to the dish. Third, it is pressure-cooked after a bit of bhuno that saves a lot of time from range to the table.

Stuff you’ll need for Sum Ka Mutton

Mutton 750 grams
Ghee 2 tbsp
Cinnamon 2 inch
Bay Leaves 4 No.
Cardamom 4 No.
Black Peppercorns 1 tsp
Cloves 4 No.
Cumin Seeds 1 tsp
Dried Red Chili 4 No.
Tomatoes 5 No.
Garlic 8 Cloves
Ginger 2 inches
Red Chili Powder 1/2 tsp
Turmeric Powder 1/4 tsp
Fresh Coriander Chopped Two bunch (save some for garnish)
Salt 1.25 tsp

The Process to make Sum Ka Mutton

  1. Clean and dry mutton pieces.
  2. Pierce tomatoes with a fork all over.
  3. Heat ghee or clarified butter in a wide pressure cooker.
  4. Add dry spices including cumin seeds, bay leaves, cinnamon, cardamom, peppercorns and dried red chilis to hot ghee till the spices release their aroma.
  5. Reduce heat & place the whole but pierced tomatoes in the pressure cooker.
  6. Add chopped coriander to the tomatoes.
  7. Add powdered masalas and cook till they are fragrant.
  8. Add mutton & salt and fry or bhuno slightly.
  9. Put the lid on the pressure cooker and put the heat on high.
  10. Remove from fire after 5 whistles and let the pressure go by itself.
  11. Mash the tomatoes nicely before putting in a serving bowl.
  12. Garnish with reserved chopped coriander and serve hot with jeera rice & onion tomato raita.

Clean and dry mixed mutton
Finely chop two bundles of fresh coriander leaves
Pierce tomatoes with a fork on all sides

Two tablespoon of ghee
Whole cumin seeds
Whole red chilies and cinnamon
Cardamom, Cloves and Black Peppercorns
Four dried bay leaves
Eight cloves of garlic
Inch and a half of ginger
All ingredients bunched together
Get powdered spices ready
Heat ghee and add all whole spices
Add whole tomatoes
Add chpped green coriander
Add mutton pieces, powdered spices and salt
Fry or bhuno for a couple of minutes
Pressure cook for five whistles for this look

सुम का मटन बनाने के लिए कुछ मात्राएँ।

सुम का मटन बनाने के लिए सामग्री।

मटन / गोश्त ७५० ग्राम
घी २ बड़े चमच
दालचीनी २ इंच
तेजपत्ता
हरी इलाइची
खड़ी कालिमिर्च १ छोटा चमच
लौंग
खड़ा ज़ीरा १ छोटा चमच
सूखी लाल मिर्च
टमाटर
लहसुन
अदरक २ इंच
लाल मिर्च का पाउडर आधा छोटा चमच
हल्दी पाउडर एक चोथाई छोटा चमच
हरा धनिया बारीक कटा हुआ दो गड्डी (थोड़ा सा सजाने के लिए बचा लें।
नमक सवा छोटा चमच

सुम का मटन बनाने की विधि।

  1. मटन या गोश्त के पीस धो कर सूखा लें।
  2. टमाटर में एक काँटे से छेद कर लें। हरा धनिया बारीक काट लें।
  3. घी को प्रेशर कुकर में गरम कर लें।.
  4. सारे सूखे मसाले, ज़ीरा, तेजपत्ता, दालचीनी, इलाइची, काली मिर्च और सूखी लाल मिर्च को भून लें।
  5. आँच धीमी कर के टमाटरों और हरे धनिए को प्रेशर कुकर में डाल लें।
  6. अब हल्दी और लाल मिर्च पाउडर डाल लें।
  7. मटन या गोश्त को प्रेशर कुकर में डाल लें और हल्का भून लें।
  8. प्रेशर कुकर का ढक्कन लगा कर उसको ५ सिटी दें।
  9. प्रेशर को अपने आप निकालने दें।
  10. अगर मटन पक चुका हो तो हांडी में निकाल कर टमाटर को अच्चे से पिचका लें।
  11. सुम का मटन टायर है। इसको थोड़े हरे धनिए से सज़ा लें और ज़ीरा पुलाव और प्याज़ टमाटर के रायता के साथ गरमागरम परोसें।

Variations and/or Additions

  • Just as my Dad likes it, you may also want to add some potatoes to it.
  • A garnish with garam masala will enhance the flavour of Sum Ka Mutton further.
