How can I retain the colour of Spinach?

Before use the spinach needs to be blanched. At many times, especially if let unattended, the spinach gets boiled. This leads to overcooking and loss of distinctly green colour of spinach.

However, there is a simple way t avoid this. Simply, fill a bowl up with ice as your spinach cooks and cover the ice in cold water. Immerse your spinach into the ice water after it finishes cooking.

This helps preserve the bright green color of your blanched spinach as well as maximizes the spinach flavor and nutrient content.

Spinach gravy recipe or spinach sauce recipe is the foundation of a very nutritious curry. It works very well for both vegetarian and non-vegetarian dishes. Palak paneer and palak mutton are examples of two of a kind but different.

Spinach can be used in salads, sauce (spinach pesto), soups and crustless bakes. You can use it with paneer, potatoes, chicken and lamb. It can be used for your lasagna and lentils as well.

Get your ingredients ready to make Creamy Homemade Spinach Sauce or Creamy Spinach Gravy


Blanch & puree the spinach with green chillies, mint & coriander in a blender. Chop the onion & garlic.


Heat the pomace olive oil in a pan or a skillet and add the cumin seeds and cardamom. This is a vegan recipe, however, you can even make this with ghee. It is delicious too.


When the cardamom & seeds crackle, add chopped onion & garlic. Saute till they are brown. Suggestion: you can use whole dry spices as well here. Feel free to include a bay leaf, cinnamon, cloves, black cardamom.


Add spinach, chilli, coriander, mint puree and mix well.


Add seasoning – salt, cumin powder and sugar.


Simmer for five (5) minutes and add curd a spoon at a time. Keep mixing vigorously.


When the curd blends in well, simmer for two (2) minutes and remove. The spinach gray or spinach sauce is ready.

Ingredients

  • 300 gram baby spinach washed
  • 1 piece Garlic clove
  • ½ piece Red onion diced
  • 30 gram Fresh coriander roughly chopped
  • 2-3 piece Green chillies deseeded if you like, chopped
  • 15 gram Fresh mint leaves picked
  • 1 piece Cardamom pod seeds removed and crushed
  • 1 tsp Ground cumin
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 100 ml Pomace olive oil
  • 50 ml Curd or yoghurt

Instructions

  • Get your ingredients ready for spinach sauce or spinach gravy.
  • Blanch & puree the spinach with green chillies, mint & coriander. Chop the onion
  • Heat the pan and add cumin seeds and cardamom.
  • When they crackle, add chopped onion, garlic and saute till brown.
  • Add spinach, chilli, coriander, mint puree and mix well.
  • Add seasoning - salt, cumin powder and sugar.
  • Simmer for five (5) minutes and add curd a spoon at a time. Keep mixing vigorously.
  • When the curd blends in well, simmer for two (2) minutes and remove.
  • Use the same day or freeze (in this case do not add curd)

Notes

  • If you intend to use this spinach sauce or spinach gravy later, simply freeze it without adding the curd.
  • To use, thaw and bring it to a boil, add curd and then use for your dish.
