Chicken Pulao is a simple one-pot dish, a quick fix meal for lunch or dinner. It very easy to make and gets ready quite quickly. Chicken, Basmati Rice and several spices are cooked together in one large pot to make a mouth-watering delicious meal.
Chops two medium-size onions and two medium-sized tomatoes.
Heat ghee or clarified butter in a thick-bottomed cooking vessel. I usually use a wide pressure cooker for this.
Add dry spices including cumin seeds, bay leaves, cinnamon, cardamom, peppercorns, star anise and mace to hot ghee till the spices release their aroma.
Add onions and fry till just about brown.
Add tomatoes and salt to fasten the cooking process.
When tomatoes are slightly mushy add ginger garlic paste and green chillies. Fry till the raw smell of ginger and garlic goes away.
Add powdered masalas and cook till they are fragrant.
Add chicken and cook till almost done.
Add and mix the rice with chicken and fry for a minute.
Add two cups of water and cover with a lid.
When the water comes to a boil, reduce heat to simmer till rice is done.
Your one-pot meal of chicken pulao is ready to be served.
Garnish with chopped coriander and serve hot with onion tomato raita.
