Gajar Ka Halwa Recipe – A Delicious Carrot Halwa Dessert for Winters – Gajar ka halwa or Carrot Halwa is a carrot-based sweet dessert pudding from the Indian subcontinent.
8-10tablespoonSugar or JaggeryOr according to your taste

Instructions
Get your ingredients ready for Gajar Ka Halwa Recipe. Grate the carrots finely.
Take 3 tablespoons of ghee and heat it up in a non stick pan or a skillet. If you have a cast iron kadai that works beat.
Add the almonds, pistachio nuts, cashew nuts & raisins and saute till slightly swollen.
Next, add the grated carrots and milk. Keep the heat on medium-low and keep stirring the delicious mixture.
Bring the mixture to a roaring boil and then simmer.
Let the mixture reduce to almost one-third. This is the most tedious part of the process and requires your patience. Continue to stir until the halwa reduces down to a fudge like smooth consistency.
Finally, add khoya, powdered jaggery (shakkar) or sugar & green cardamom powder to suit your taste and continue to cook the halwa for another 5 minutes (until the liquid from the sweetener has been absorbed).
Garnish it with some khoya and slivers of pistachio, almonds & cashew nuts, raisins and serve hot.
Notes
Save some khoya and dry fruits for garnishing at the end.
