Chop onion, ginger, green chilli and fresh coriander leaves.
Break two eggs and beat them with a fork or an egg beater in a bowl.
Add all ingredients to the bowl and beat well till fluffy.
Add salt to suit your taste.
Heat ghee in frying and pour the egg mixture once it is hot.
Spread the egg mixture a bit keep the round shape. This allows omelette to cook evenly.
Once you see the omelette drying on the top, give it a flip with a flat spatula.
When the other side is cooked, flip it back again and place the cheese slice on the left side.
Fold in a half-moon shape and remove from fire. The cheese keeps on melting as you plate the cheese masala omelette.
Serve with toasted bread of your choice. I used brown bread but there are no restrictions. Have a great start of the day.
