Ingredients
  

  • 1 Piece Tomato
  • 0.5 Tablespoon Oil
  • 1 Piece Green Chilli Finely Chopped
  • 1 Tablespoon Fresh Coriander Leaves Finely Chopped
  • 0.5 Teaspoon Assorted Dry Herbs
  • 2 Piece Multi-grain Bread
  • 0.25 Teaspoon Salt

Instructions
 

  • Slice the tomatoes. Let them be between paper towels to remove moisture.
  • Pan-fry the tomatoes with a little olive oil. Get their juices flowing.
  • Toast the bread and butter it liberally.
  • Mix herbs, green chillies, coriander and ricotta.
  • Season with salt and pepper to your taste.
  • Layer ricotta on one slice and place the tomato slices.
  • Butter and layer ricotta on the second slice.
  • Place it on tomatoes and serve.

Notes

  • Use soft and firm tomatoes.
  • Cut them in the center to remove pulp and seeds
  • Use fresh and firm bread for the sandwich.
  • You can increase or decrease chillies to amount you can handle.
