Peel the skin of maris piper potatoes.
Cut into 1/2 inch thick sticks.
Soak in ice cold water until the starch runs out clean.
Pat dry with kitchen towels to remove remaining moisture.
Heat up the oil on medium heat. Make sure the oil is approximately 150 degree celcius.
Break into batches and deep fry for 5 minutes or until the potatoes turn tender.
Drain off over kitchen towel and cool completely.
When cooled completely, deep fry in hot oil the second time on high heat.
Stir occasionally and fry until it the fries turn golden brown and crisp.
Drain off to remove excess oil.
Sprinkle ½ tsp chilli powder and ½ tsp salt to season the fries.
Serve hot with ketchup of your choice.
