Whisk the curd well. Wash, blanch the cashew nuts and make a paste. Wash, blanch the melon seeds (magaz) and make a paste. Peel, wash, boil and strain the onions.
Heat oil in a kadai and add boiled onion paste. Stir and add garlic paste, ginger, paste, green cardamoms, cloves, & slit green chillies.
Stir and add melon (magaz) and cashew nut paste. Stir & add half cup of water and mix well. Cook on low heat for five to ten minutes.
If you are using mawa in your white curry gravy, you can avoid the magaz and add grated mawa instead at this point.
As the oil separates, add whisked yogurt, salt and white pepper powder. Stir and cook on high till oil separates again. Adjust seasoning and cool the Indian White Gravy.
