My favourite ingredients are mushrooms and cheese. I also like chopped onions, green chillies, fresh coriander, ham, bacon—the list goes on.
Really, you can use whatever you have on hand and whatever you’re in the mood for.

Here is the simplest possible recipe for an Indian cheese omelette. It is no fuss, simple to make and an awesome way to start your day. It doesn’t use powdered spices so you can rest assured about spice levels.
This cheese masala omelette recipe uses ghee. I am replacing my cooking oils with ghee for its obvious benefits.
However, you can use your preferred cooking medium, vegetable oils or even butter for this recipe.
It doesn’t need grated cheese so that is a task avoided. However, if you wish you can always grate in some cheddar. I pair this two-egg cheese masala omelette with three slices of toasted brown bread.
You can replace brown bread with the bread of your choice. Adding bread ensures I do not have a craving for more food until it is time for lunch.

Indian Masala Omelette recipe is the most delicious protein-packed breakfast, a fluffy omelette with a few slices of toast is all you need to take you through the day nicely.
Cheese Masala Omelette, Indian Cheese Masala Omelette Recipe
Ingredients
- 2 Piece Eggs
- 1 Piece Onion Small-sized
- 0.5 Inch Ginger Chopped
- 1 Piece Green Chili
- 1 Tablespoon Fresh Coriander Finely chopped
- 1 Piece Cheese Slice I use brand “Go” you can use Amul
- 1/4 Teaspoon Salt
- 1 Teaspoon Ghee
Instructions
- Chop onion, ginger, green chilli and fresh coriander leaves.
- Break two eggs and beat them with a fork or an egg beater in a bowl.
- Add all ingredients to the bowl and beat well till fluffy.
- Add salt to suit your taste.
- Heat ghee in frying and pour the egg mixture once it is hot.
- Spread the egg mixture a bit keep the round shape. This allows omelette to cook evenly.
- Once you see the omelette drying on the top, give it a flip with a flat spatula.
- When the other side is cooked, flip it back again and place the cheese slice on the left side.
- Fold in a half-moon shape and remove from fire. The cheese keeps on melting as you plate the cheese masala omelette.
- Serve with toasted bread of your choice. I used brown bread but there are no restrictions. Have a great start of the day.
Notes
- Addition of tomatoes is optional, so you may use it if you like tomatoes in your omelettes.
- If you don't have cheese slices, use any soft cheese that may be available
