This Indian Masala Omelette recipe is a super quick and simple egg omelette recipe which can be rustled up in no time and makes for a hearty breakfast.

Pair it with slices of multigrain bread for a hearty wonderful breaking of your fast. You can also pair it with paratha if you prefer them more.

A Spicy Indian Masala Omelette is usually my ‘go-to’ late breakfast. The combination of ground spices, chillies and eggs just works. Pair it with some peanut chutney and have a swell start of the day.

OMELETTE OR OMELET – AN INTRODUCTION

Seriously, an omelette or omelet is a dish made from beaten eggs fried with butter or oil in a frying pan. It is quite common for the omelette to be folded around fillings such as cheese, chives, vegetables, mushrooms, meat, or some combination of the above.

This is my Indian take on an omelet. But then you know this already.

Omelettes are infinitely customisable! And, there is something magical about a good omelette – the way a couple of eggs and a pinch of salt can, in less than a minute, achieve such greatness.

Light, yet rich in flavour, swift, but satisfying, the omelette is the ultimate frugal supper.

I love how a few simple ingredients become such a fulfilling meal. Vegetables are incorporated into the eggs while whisking, with some spices thrown in for good measure.

After a few minutes on a hot pan, you have a delicious omelette that packs quite a punch – the Indian Masala Omelette.

This is a really delicious version of an Indian masala omelette recipe, which is both full of fresh flavours, and surprisingly light. It’s great if you fancy a quick savoury breakfast, light lunch or supper, Indian style.

Ingredients

  • 2 piece Eggs
  • 1/4 Cup Coriander Finely chopped
  • 1 piece Onions Small & Finely chopped
  • 1 piece Tomatoes I didn't use, you can use small & Finely chopped
  • 1 piece Green Chillies Finely chopped
  • 1 Inch Ginger Finely chopped
  • 4 piece Garlic Pods Finely chopped
  • 1/4 Teaspoon Turmeric Powder
  • 1/2 Teaspoon Kashmiri Red Chilli Powder
  • 1/4 Teaspoon Garam Masala
  • 0.25 Teaspoon Salt Please adjust it to suit your taste

Instructions

  • Get your ingredients ready. Break the eggs and whisk them lightly for fluffiness.
  • Add the chopped onions, garlic, ginger, green chillies, coriander, Kashmiri red chilli and turmeric powder to the bowl. Give it a mix. Season to taste with salt.
  • Heat a frying pan and add ghee.
  • Pour the whisked eggs into the skillet. Tilt the pan immediately so the eggs coat the entire bottom. The eggs should sizzle on contact; if not, continue cooking, but remember to heat the pan a little longer next time.
  • Once cooked from the bottom, flip the omelette and cook through the other side.
  • Fold it into a half-moon shape.
  • Place the omelette into a serving plate or a platter and serve with toasts.
  • Enjoy your breakfast.

Recipe Notes

  • Omelet pans are shallow and have sloped sides – designed for ease of moving the omelet mixture during cooking and for sliding the finished omelet out. If you don’t have an omelet pan, it’s best to use a heavy skillet with sloping sides. Use a nonstick skillet.
  • To reduce the spice levels, you can reduce the green chillies
  • To increase the spice quotient, simply replace the Kashmiri red chilli powder with normal red chilli powder for your Indian Masala Omelette

Variations

Short on time – You can skip the onion.

Different spicing – for a Moroccan vibe skip the turmeric and replace the garam masala with 1 teaspoon each ground cumin and ground coriander. You can even add East Indian Bottle Masala.

Different herbs – mint, chives or basil are also great

More substantial (carb lovers) – serve with warm roti, paranthas, tortillas or pita bread.

More substantial (low carb) – serve with roast cashews or peanuts or mushrooms.

Hot! Hot! Hot! – serve with chilli oil or chilli salt.

Cheesey – add some crumbled feta, goats cheese or paneer with the eggs.

Tomatoes – Addition or avoidance of tomatoes is just your call. But you add some tomato chutney on the side too.

FINALLY, TO SUM IT UP

Indian masala omelette with bread

Indian Masala Omelette recipe makes one of my favourite breakfast meals and keeps me going easily up to lunch. It is quite different from a “normal” omelette in texture which is soft and eggy.

This omelette is cooked until golden on both sides and is spongy rather than soft. You serve it with toasts or hash browns and plenty of tomato ketchup. Or, you can even slide it into a bun and make it into a Masala Omelette Slider.
