This steamed basa recipe with celery, scallions & tomato sauce was a recent & deliciously turned out experiment. I had some tomato juice (Real Tomato Juice that comes in tetra packs) lying in the fridge and it was nearing expiry. With no intention to and not wanting to throw it away, I started cooking with it.

This steamed basa recipe is one of the two recipes that I have already done. I will share my tomato rice recipe made with the same tomato juice also very soon.

This particular steamed base recipe is for a super simple, flavour-filled, steamed fish that can be enjoyed as an appetizer or entree. Opting to use frozen fish fillets as against fresh fish, I found that it is convenient, just as delicious, and a cinch to prepare with no fish skin and bones to contend with at the table!

So, here is my simple and easy recipe for making sumptuous steamed basa at home with refreshing celery, scallions and tomato-based sauce. Enjoy when you eat this simple fish recipe. Do comment if you like what you ate. :-)

Tip: I have used a bamboo steamer for steaming the fish. If you don’t have one handy, simply steam the fish in a wide pressure cooker on a high rack used in microwaves. Ensure you keep the salt low since butter and tomato juice will also contribute their own. Also, to save time, you may want to put the fish for steaming and then work with your sauce.

Basa Fillet 300 Grams
Butter 10 Grams
Chilly Vinegar 1 Tablespoon
Garlic Paste 1 Teaspoon
Ginger Paste 1 Teaspoon
Celery Finely chopped 1 Whole Stick with Leaves
Scallions 1 Small Bulb
Chilli Flakes 0.5 Teaspoon
Salt 0.5 Teaspoon
Black Pepper 0.5 Teaspoons
Tomato Juice Dabur Real 1.5 Cups

The Process to make Steamed Basa with Celery, Scallions & Tomato Sauce

  1. First of all, get your ingredients ready.
  2. Put the steamer on a wok or kadhai with boiling water. Lay down the basa fillet and cover it with the lid. Steam for 10 minutes.
  3. Divide your bulb of scallions on two part. Slice the top while bulb into discs.
  4. Finely chop remaining scallions and celery. Set aside.
  5. Mix ginger and garlic paste with salt and pepper. Keep aside.
  6. Scrub the frying pan with butter.
  7. Fry ginger and garlic paste.
  8. When done, add celery, scallions & chili flakes and fry a little more. Add chilli vinegar at this time as well.
  9. Add tomato juice and let the sauce reduce and become thicker.
  10. Remove from fire once you see oil floating on the top.
  11. Take a serving platter and make a bed of sauce in a shape similar to your basa fillet.
  12. Lay the steamed basa fillet on the bed of sauce.
  13. Cover completely with more sauce.
  14. Garnish with sliced scallion discs, some bean sprout salad and serve hot.

Take a good quality bamboo steamer
Good quality Chinese wok
Rest the steamer on the wok with boiling water
Add the basa fillet to the steamer
Cover the steamer with the steamer lid
Get the ingredients ready
Melt the butter. I usually scrub the pan for even coating
Fry ginger garlic paste till it cooks
Fry scallions, celery & chilli flakes and chill vinegar
Add the leftover tomato juice
Make a bed of sauce on a platter about same size as the fish
Lay the steamed basa fillet on the bed of sauce
Coat well with more sauce till covered
Garnish with slices of scallions

स्टीम्ड बासा सेलरी, हरे प्याज़ और टमाटर की सॉस में बनाने के लिए कुछ मात्राएँ।

सामग्री स्टीम्ड बासा सेलरी, हरे प्याज़ और टमाटर की सॉस में बनाने के लिए।

सामग्री  किस प्रकार की? कितनी?
बासा मच्छी फ़िले ३०० ग्राम
मखन १० ग्राम
चिली सिरका १ बड़ा चमच
अदरक पेस्ट १ छोटा चमच
लहसुन पेस्ट १ छोटा चमच
सेलरी बारीक कटी हुई १ पूरी डंडी पत्तियों सहित
हरा प्याज़ १ छोटा लेकिन पूरा नग
नमक आधा छोटा चमच
सूखी कटी लाल मिर्च आधा छोटा चमच
काली मिर्च आधा छोटा चमच
टमाटर का जूस डाबर रियल डेढ़ चमच

स्टीम्ड बासा सेलरी, हरे प्याज़ और टमाटर की सॉस में बनाने की विधि।

  1. सारी सामग्री एकत्रित कर लें।
  2. कढ़ाई या वॉक में पानी उबालने के लिए रख दें और उसपे स्टीमर रख दें। बासा मच्छी के फ़िले को स्टीमर में रख कर ढक्कन लगा दें।
  3. हरे प्याज़ का सफ़ेद भाग अलग काट कर छोटे गोल स्लाइस कर लें।.
  4. बाकी बचे हुए हरे प्याज़ और सेलरी को बारीक काट लें।
  5. अदरक और लहसुन को नमक और काली मिर्च के साथ पेस्ट में मिला लें।
  6. फ़्राइइंग पैन में मखन पिघाल लें और अर्दक लहसुन का पेस्ट भून लें।
  7. जब पेस्ट पक जाए इसमें सेलरी और हरे प्याज़ को कटी हुई लाल मिर्च के साथ हल्का भून लें। यहीं पर चिल्ली सिरका भी डाल लें।
  8. अब इसमें टमाटर का रस डाल का पका लें जब तक तेल ऊपर ना आ जाए और सॉस गाढ़ी हो जाए।
  9. आँच से उतार लें और एक लम्बे परोसने वाले प्लैटर में सॉस की परत बना लें। यह परत बासा मच्छी के फ़िले के आकार की होनी चाहिए।
  10. इस परत पर बस का फ़िले रख लें और ऊपर से और सॉस डाल लें। बासा मच्छी का फ़िले सॉस से ढक जाना चाहिए।
  11. अब इसको स्लाइस किए हुए गोल हरे प्याज़ के छल्लों से सज़ा कर अंकुरित मूँग दाल के सलाद के साथ गरमागरम परोसें।
