Steamed Fish with Mushroom Sauce, Steamed Basa with Mushroom Sauce – Easy, Luscious & Creamy. A nutritious and flavoursome steamed fish recipe that works with any in-season white fish.

While this recipe works well with any white fish, I have used basa fish for this. So, essentially this is steamed basa with mushroom sauce.

Basa (Pangasius bocourti) is a species of catfish in the family Pangasiidae. Basa are native to the Mekong and Chao Phraya basins in Mainland Southeast Asia. Basa is an excellent source of high-quality protein and healthy fats like omega-3 fatty acids.

It is cheap as compared to other white fish and has a mild taste. Its flaky, firm texture makes it popular worldwide.

How do I steam a white fish?

If you have a steamer, you can steam the white fish over medium heat for 8 to 10 minutes. Turn the burner down so the water simmers under the steamer basket. Heat the fish until it’s opaque and cooked.

I have used a bamboo steamer for this recipe. You can use fish fillets if you prefer for a steamer, or you even can cook the fish whole if it fits in the steamer.

Steaming is an ancient cooking technique, so available equipment comes in all shapes and sizes. You can use a steaming basket, Chinese bamboo steamers, to elaborate copper fish kettles and modern, electric devices.

What kind of fish can I steam?

Fish that are lean and flat hold up well when steamed. Fish like Tilapia, basa, cod and red snapper best suit this style. Steaming is also one of the healthier methods of cooking fish, as little if any fat is required in the cooking process.

Fillets cook quickly, and evenly, and produce amazing results with very little effort. Catfish, bass, bream, brill, lemon sole, tilapia, basa, cod, plaice, ling and pomfret are good choices.

If you’re steaming fish with white flesh, then the finished result should be pearly white too. Else, the fish may be off. If the fillet develops a yellow hue after steaming, then the fish is no good: the taste will be compromised.

Get your ingredients ready to make Steamed Fish with Mushroom Sauce | Steamed Basa with Mushroom Sauce.


To make the creamy & delicious mushroom sauce, heat 3 tbsp of butter in a pan and let it sizzle. Then, add chopped garlic and onions. Saute till the raw smell of garlic goes away and onions are translucent.

Add sliced mushrooms and cook for about 5 minutes.

Cook till the mushrooms turn soft, brown and loose their moisture for about 5 minutes. Add sea salt and dried thyme and cook for another minute.

Check the steamer for the fish. It should be done by now (8-10 minutes).

Immerse the steamed basa fish into the mushroom sauce and let it cook for another minute. You can either immerse the entire fillet or cut it into strip and add to the sauce.

Notes

  • Use fresh fish fillets if available.
  • At times, you are not able to get heavy cream. The fat content of cream is important to thicken the sauce. If this is the case you can add a teaspoon of cornflour mixed with water to the sauce & thicken it.
