Chawal Garam Masala is a quick, flavorful garam masala rice pilaf made from fresh or leftover rice. This garam masala flavoured rice goes very well with lentils, chicken or egg curries or any gravy dishes.

Garam masala rice is an ideal lunch box recipe and easily appreciated by kids and all age groups. The rice is infused with spices and masala and that’s what adds to its deliciousness.

While I have made this with fresh rice, you can also make it with leftover rice from yesterday. You can even add some cashew nuts and sultanas to the rice to garnish it.

You could use any rice like ambemohar rice, basmati rice, parimal rice, wada kolam rice or kolam rice. I have used leftover basmati rice for this recipe.

Garam masala rice recipe is a simple and delicious recipe you can make within 15 minutes. This rice is perfect for serving with chicken curry or with simple raita.

You can call this rice something in between biryani and pulao.

This recipe is the same as the masala rice recipe that uses whole spices and your imagination. Chawal Garam Masala effortlessly marries the whole spices with the goodness of basmati rice.

The end results are simply divine. Enjoy this flavourful rice preparation with veg or non-veg curries or just lentils. Just the way you like it.

Tip: Soak the rice for half an hour or so prior to cooking. You can use oil instead of ghee and make this recipe vegan too. But, ghee fluffs up the rice and gives it an amazing aroma.

You can also enhance its flavour by adding fried onions and kewra water which gives it a biryani-like taste and aroma.

The recipe for garam masala rice is quite simple to prepare. If you have leftover rice, then half of your work is done as the rest of the process is very easy & quick.

To make this aromatic rice first, you just need to cook the rice. Then temper the cooked rice with whole garam masala spices and garam masala powder.

  • 1 Frying Pan
  • 1 Sauce Pan
  • 1 Spatula


  • 1/3 cup Ghee
  • 2 piece Badiyan ka phool Star anise
  • 2 piece Dalchini Cinnamon sticks
  • 4-5 piece Sabut Kali mirch Black pepper corns
  • 3 piece Laung Cloves
  • ½ tbs Zeera Cumin seeds
  • 5 cups Water
  • ½ tbs Namak Salt to taste
  • ½ kg Chawal Rice soaked for 30 mints
  • tbs Garam Masala Powder
  • 5 piece Pudina Patta Fresh Mint Leaves


  • Get your ingredients ready
  • Clean and soak the rice for 30 minutes
  • Add whole & powdered spices to the saucepan
  • Bring it to a boil & simmer
  • Keep on heat till you see dips on the surface of rice.
  • Chawal Garam Masala is Ready


You could use oil instead of ghee and go vegan.
You could use any good brand of garam masala powder
You can add either kewra water or rose water for fragrance.
You can add vegetables of your choice to make garm masala rice more healthy and tasty.
Please cook the vegetables before adding rice as rice turns mushy if overcooked.
Adding vegetables is completely optional. For an instant version, just skip vegetables.
This garam masala rice recipe tastes great when prepared slightly spicy.
