What is Noomi Basra? Noomi Basra is the Iraqi name for Loomi. Noomi Basra are used to add a sour flavour to dishes. They are made with Persian limes through a process known as souring. They resemble dented & discarded ping pong balls that have been marinated in mud. To make them fresh lime are first cooked in saltwater (brine) and then dried in the sun till they are rock hard. The final product is a shrunken, dehydrated lime which varies in colour from brown to very dark brown.
