Rustic bread is traditional bread fermented with rustic flour, sourdough and yeast. Usually, it’s hard and brown crust encloses a simple, bread interior with an extremely porous texture, making for an unusually inviting combination of chewiness and lightness.
Rustic breads have enjoyed a resurgence of culinary interest in recent years. This can be attributed to two main reasons: the decline of the quality of the baguette & consumer interest in a wider variety of breads beyond the plain soft white sandwich loaf.
