Dhuska

What is Dhuska? How is Dhuska made?

Dhuska is a traditional snack from the Indian state of Jharkhand and is also popular in parts of Bihar and Odisha.

It’s a deep-fried savoury dish made primarily from rice flour and urad dal (black gram lentils), ground into a smooth batter.

The batter is typically mixed with spices, vegetables, and sometimes herbs to enhance the flavour. The mixture is then deep-fried in the shape of small fritters or doughnuts.

The texture of dhuska is light and crispy on the outside, with a soft and fluffy interior. It is often enjoyed with chutneys, such as tamarind or mint chutney, and can be served as a snack or breakfast dish.

Variations and Ingredients:

  • Rice flour and urad dal form the base of the batter, but some recipes also include chana dal (split chickpeas) for added texture and flavour.
  • Spices like cumin, ginger, and asafoetida are commonly added for taste.
  • Vegetables like onions, carrots, and green chillies might be included in the batter for extra crunch and flavour.
  • Herbs like coriander are often used to garnish.

It is somewhat similar to idli or vada but is distinct due to the use of rice flour and urad dal in a specific ratio, creating a unique texture and flavour. Dhuska is often paired with aloo curry (potato curry) or chutneys in many households.
