What is Achiote (Bixa orellana)? Achiote is an orange-red condiment and food coloring derived from the seeds of the achiote tree, native to tropical regions from Mexico to Brazil. It is often used to impart a yellow or orange color to foods, but sometimes also for its flavor and aroma. It is used to make achiote paste. Achiote paste is a popular coloring and flavoring in Central American, Mexican, and Caribbean cuisines and is made with annatto seeds, cumin, pepper, coriander, oregano, cloves, and garlic.
