What is a Badi? Badi, wadi or vadi are sun-dried lentil dumplings are traditional foods made to enrich the meals with proteins or substitute green vegetables when they are in scarcity. The hand-dropped Badi are made using a variety of lentils like urad dal, green moong dal, yellow moong dal and others. A badi needs to be both delicate and strong at the same time. It is light to hold, is crisp outside and airy inside. It is so tender that one can steam cook it in 2-3 minutes. It may be made spicy with black pepper, powdered dried red chillies and other spices that maybe mixed. They are rolled into hollow cakes about 5cm diameter and sun-dried. To use them, simply break into bite sized pieces, shallow fry or saute, and add to rice or vegetable dishes, dals and soups for flavour, texture and aroma. Cook until tender.
