What is Maghaun? Maghaun (ਮਘੌਣ) is the Punjabi name for Indian Long Pepper. Maghaun is a flowering vine in the family Piperaceae, cultivated for its fruit, which is usually dried and used as a spice and seasoning. Maghaun was freely used alongside common black pepper in kitchens from ancient Rome to Renaissance Europe. But the arrival of chiles from the New World and the rising popularity of black pepper shoved Maghaun out of the culinary spotlight. Maghaun possesses black pepper’s heat and musk, but in a less harsh, more nuanced way, tempered by sweet notes of nutmeg, cinnamon, and cardamom.
