What is Litti Chokha? How is Litti Chokha made?

Litti Chokha is a traditional and popular dish from Bihar, Jharkhand, and Uttar Pradesh. It consists of two main components:

1. Litti:

  • Litti is a round, roasted ball made from whole wheat flour dough.
  • The stuffing typically consists of sattu (roasted gram flour) mixed with spices like mustard oil, ajwain (carom seeds), ginger, garlic, green chillies, and lime juice for a tangy flavour.
  • It is roasted over a flame or baked in a tandoor, giving it a smoky flavour. Some also deep-fry it for a crispy texture.

2. Chokha:

  • Chokha is a mashed vegetable accompaniment, prepared from roasted eggplant (baingan), potatoes, and/or tomatoes, mixed with mustard oil, green chillies, onions, garlic, coriander, and spices.
  • It is simple yet flavorful, complementing the Litti perfectly.

Serving:

Litti Chokha is often served with a generous drizzle of ghee (clarified butter) on top of the litti, adding richness to the dish. It’s hearty, nutritious, and deeply rooted in the rustic culinary culture of the region.
