Red garlic chutney or masala is an essential ingredient of Mysore Masala Dosa. The red chilli chutney or paste is smeared inside the dosa before the potato masala is layered.
The red chilli chutney or paste is made with onions, Kashmiri red chillies, garlic and chana dal. In some recipes tomatoes are also added.
