Phara | What is Phara?

Phara is also known as Fara. It is a traditional dish from the Indian state of Chhattisgarh.

It is a steamed dumpling made with rice flour and filled with a spiced mixture of lentils or chana dal.

Phara is similar to the popular North Indian dish, gujiya, but with a savoury twist.

Recipe for making Phara

Here’s a general overview of how Phara is prepared:

Ingredients for Phara:

– Rice Flour: Used to make the dough for the dumplings.
– Chana Dal (Split Bengal Gram): Soaked and cooked until soft.
– Aromatics: Onions, garlic, ginger, and green chillies are commonly used for their flavours.
– Spices: A combination of spices, including red chilli powder, turmeric powder, garam masala, coriander powder, cumin powder, and salt.
– Oil or Ghee: Used for cooking and tempering.
– Fresh Herbs: Chopped coriander leaves (cilantro) add freshness.
Water: Used to make the dough and for steaming.

Preparation of Phara:

1. In a mixing bowl, combine rice flour with a pinch of salt. Gradually add water and knead to form a soft and pliable dough. Cover the dough and let it rest for about 15-20 minutes.
2. In the meantime, prepare the filling. Heat oil or ghee in a pan and add chopped onions. Sauté until they turn translucent.
3. Add minced garlic, grated ginger, and chopped green chillies. Cook until fragrant.
4. Add the cooked chana dal and the spices – red chilli powder, turmeric powder, garam masala, coriander powder, cumin powder, and salt. Mix well and cook for a few minutes to allow the flavours to meld. Remove from heat and let the mixture cool.
5. Divide the dough into small portions and roll each portion into a small circular disc.
6. Place a spoonful of the prepared filling in the centre of each disc. Fold the disc in half and seal the edges by pressing them together.
7. Bring water to a boil in a steamer. Place the filled dumplings (Phara) in the steamer and steam for about 15-20 minutes or until they are cooked through.
8. Once the Phara are cooked, heat oil or ghee in a pan for tempering. Add mustard seeds and cumin seeds. Let them splutter.
9. Add curry leaves and pour this tempering over the steamed Phara.
10. Garnish with chopped coriander leaves and serve hot with green chutney or tomato chutney.

Phara is a wholesome and comforting dish that can be enjoyed as a snack or a light meal.
