As a result, I give wider than normal ranges on suggested cook times.

Where did bacon wrapped sausages come from?
Origin of bacon wrapped sausages
Nobody knows who the first genius was to wrap a hot dog in bacon or a bacon wrapped sausages, but they’re a super-popular street food in Tijuana, Mexico.
In Tijuana, bacon wrapped sausages are often topped with flavourful Mexican mainstays like corn, jalapeño, crema, and queso fresco.
The locals refer to Tijuana as “TJ,” so their bacon wrapped sausages are also known as “TJ Dogs.”
When cold, raw bacon is tightly wrapped around a premium pork or beef sausage link, it acts as a sacrificial lipid shield. As the basket slides into the airfryer, the intense, circulating convective heat of 190°C (375°F) goes to work.
Within 10 to 12 minutes, the rendering fat from the bacon strips lubricates and shallow-fries its own exterior, crisping the skin into a deeply caramelized, shatteringly crisp crunch.
Simultaneously, this outer blanket traps the sausage’s internal moisture. The direct thermal energy gently heats the interior meat matrix, expanding its juices without rupturing the casing.
The result? A perfectly taut, snap-ready sausage bite that bursts with rich juices, entirely enveloped in a salty, smoky bacon shell.
For a flawless finish, brush with a thin glaze of maple syrup or barbecue sauce during the final two minutes of cooking to trigger instant, sticky sugar caramelization.
How do you wrap hot dogs with bacon?
Wrapping of sausages with bacon
Score the sausages with thin cuts, every inch or so. Cut bacon strips widthwise in half; cut sausages in half. Wrap a piece of bacon around each piece of sausage.
Stick toothpicks through the bacon-wrapped sausage at both ends to keep the bacon from unraveling as it cooks and gets crispy. Toothpicks will also help in a quick grab.
If you want a sharper contrast of flavors, insert a tiny sliver of sharp cheddar cheese or a slice of pickled jalapeño into a small slit along the side of each sausage before wrapping it in its bacon blanket. As the interior cooks, the cheese melts into a rich, molten core, while the jalapeño cuts beautifully through the heavy fats of the pork.

What goes on bacon wrapped sausages?
How do I top up these bacon wrapped sausages?
Just about anything goes with these Airfryer Bacon Wrapped Sausages!
To elevate this TJ Dogs recipe from an everyday snack into a high-end appetizer, you can easily manipulate its surface chemistry with a few quick additions. Before wrapping the sausages, try brushing the raw bacon strips with a light dusting of smoked paprika, cayenne pepper, or brown sugar.
As the airfryer’s high-speed fan circulates the intense heat, these dry spices dissolve directly into the rendering pork fat. This creates a deeply flavorful, mahogany-colored glaze that clings perfectly to the surface instead of dripping down into the bottom tray.
Go classic with onion, pickles, mustard, and ketchup, or spice things up with jalapeño slices, hot sauce, or sriracha. The sky’s the limit!
Because the airfryer cooks with rapid air convection rather than submerging the food in oil, you get all the deep-fried texture you want with none of the grease-logged sogginess.
Serve them hot with a side of sharp honey mustard or a creamy horseradish dip to create the perfect balance of heat, salt, and crunch.
