What is Lavose? Lavose is an alternate English name for Lovage, a hardy perennial with a height of 90 cm, flowers in summer, dying down in autumn. It bears clusters of yellow flowers with a sharp smell. Its flavour and smell can be described as a mix of celery and parsley, but with a higher intensity of both of those flavours. The alternate name Lovage is derived from “Love-ache”. Levisticum officinale has been grown over the centuries for its aromatic fragrance, it’s fine ornamental qualities and, to a lesser extent, its medicinal values. The parts used for culinary purposes are the leaves used as an herb, the roots as a vegetable, and the seeds as a spice, especially in southern European cuisine.
