Acidic solvent ion extraction is a specialised chemical separation technique used in the food industry to isolate, purify, and concentrate high-value organic molecules, colourants, and micronutrients from complex agricultural materials.

Unlike heavy industrial metallurgy, food-grade ion extraction relies on weak organic acids (like citric, acetic, or lactic acid) combined with polar solvents to alter the ionisation state of target molecules, making them highly soluble and easy to harvest.

The Mechanism in Food Matrices

The core principle hinges on manipulating the pH-dependent ionisation of target compounds.

Many natural food components—such as anthocyanins (red/purple pigments), polyphenols, and proteins—contain functional groups that change charge based on the acidity of the surrounding medium.

By introducing an acidic solvent matrix, the system lowers the pH below the target molecule’s pKa.

This protonates the compound, transforming it into an ionic or highly polar state.

The modified ions break free from the dense plant matrix (like cellulose or pectin binding sites) and migrate efficiently into the liquid extraction solvent phase, leaving unwanted bitter compounds, fibres, and sugars behind.
