Chaman Kaliya Recipe - Kashmiri Pandit Paneer Qaliya
Chaman Kaliya is a preferred dish for vegetarians in the Kashmiri Cusine. Chaman Qaliya is a dish made with paneer (called Chaman in Kashmiri) or cottage cheese cooked in aromatic spices like turmeric, cardamom & fennel. It is very nutritious and is known to boost your immunity.
Chaman Kaliya or Yellow Panner is a dish that is very easy to put together. It is an easy paneer curry that doesn’t involve any grinding or too much chopping. Hence, it is made more often in Kashmiri homes and especially so when there is a vegetarian feast.
Chaman Qaliya or Yellow Paneer?
Paneer (cheese) plays an important role in the Kashmiri vegetarian Saal. While meat takes centre stage in any spread, paneer is the preferred option for vegetarians.
Chaman Kaliya or Yellow Paneer is one of those utterly simple dishes that deliver on taste on a day when one meal is all that you are going to get.
Kashmiri cuisine is greatly influenced by Persian, Afghani and Central Asian cuisines.
It is also broadly divided into Hindu Kashmiri Pandit style of cooking and Muslim style of cooking. Both differ greatly from one another. However, the best part in the Kashmiri cuisine is that for every kind of non-vegetarian dish there is a similar vegetarian one.
Chaman Kaliya Recipe, Kashmiri Paneer Kaliya Recipe
Kashmiri cuisine is primarily meat-based. Vegetarian food though present perhaps is not in a great deal of variety as in other parts of India. For vegetarians, a dish that stands out is Chaman Kaliya. It is Paneer (Cottage Cheese) cooked in aromatic spices and served with rice.
Kashmiri vegetarian (and non-vegetarian) food includes local vegetables and fruits like spinach or greens (Haak), turnips, radish, lotus stem (nadir), brinjals, plums, apricots, green apples etc.
I recently did a Kashmiri meal for friends and had selected paneer kaliya recipe or Paneer/ Indian Milk Cheese In Yellow Gravy to go with other dishes. Chaman Kaliya is quite fragrant owing its fragrance to ground cardamom and fennel. It is reasonably easy to make too.
Chaman Kaliya Recipe or Paneer Kaliya or Kashmiri Style Cottage Cheese in Yellow Curry
Chaman Qaliya is a perfect weeknight dish. It’s simple to make without any complex ingredients. It is healthy and gets ready under 30 minutes that makes it ideal after a long day’s work.
Kashmiri Chaman Qaliya or Chaman Kaliya Recipe
Ingredients
- 200 gram Chaman/ Cottage Cheese/ Paneer Cut in rectangles or cubes
- 4 Tablespoons Vegetable oil For frying
- 1 Cup Milk
- 1/2 Teaspoon Asafoetida Heeng
- 1 Teaspoon Turmeric Haldi
- 1 Teaspoon Dried Ginger Powder Saunth
- 1/2 Teaspoon Fennel Powder Saunf
- 2 Piece Bay Leaves Tej Patta
- 2 Piece Cloves Laung
- 1 Piece Black Cardamom Badi Ilaichi
- 1 inch Cinnamon Dal Chini
- 2 Piece Bay Leaves
- 3 Piece Green Cardamom Powder Choti Ilaichi
- 1 Cup Water
- 1 Tablespoon Clarified Butter Ghee
- 1/2 Tablespoon Garam Masala Powder
- 0.5 Teaspoon Salt Namak
Instructions
- Cut the paneer in cubes.
- Heat ghee in a pan and golden fry the paneer.
- Heat ghee in a pan. Add a pinch of asafoetida, turmeric powder, cinnamom, bay leaf, black cardamom, cloves and cumin seeds. Wait for the whole spices to crackle. Add the paneer and water
- Add saunf (aniseed) powder, saunth (ginger) powder and salt to your taste. Cover with a lid and bring to boil.
- When the volume is reduced to half, add milk and continue boiling.
- After 5 minutes, add cardamom powder, garam masala.
- Cover with a lid and cook for 5 more minutes
- Serve hot with freshly cooked rice.
Notes
- Use fresh paneer if possible. If using packages paneer, immerse it in hot milk for about 15 minutes to get a softer texture.
- Saffron is optional, but feel free to use it if you wish to.
