Mouthwatering saffron rice is abounding in flavour despite having very few ingredients. Saffron has a hay-like aroma and includes flavour like that of honey.
A dish like tehri is perfect for times when you are craving for something classic and delectable but in a very limited time.
This amazing rice preparation goes well with a wide variety of dishes from Indian cuisine.
I hold the state of Jammu & Kashmir very close to my heart. I have visited it nothing less than 8 times before the insurgency started. I travelled to the state once again recently.
However, this time it was to Ladakh. In Leh, I gorged on sumptuous Ladakhi food. I was also able to savour Kashmiri food at a small shack run by Kashmiri Muslims.
There was a mention of them cooking saffron rice (Tehri) on a specific day. Unfortunately, I was unable to make it on time and missed it. So while I was planning to cook Kashmiri food for friends, I decided to add saffron rice to the menu.
Saffron rice is rice prepared with one of the most exquisite, and expensive, spices in the world. The golden colour imparted by the saffron leaves makes this rice dish an elegant accompaniment to any curry.
Rice is an integral part of Kashmiri cuisine. Being staple it is cooked in many ways. It can be sweetened or unsweetened. Kashmiri pulao can be vegetarian or non-vegetarian. Saffron is grown in Kashmir in abundance and is used in a lot of Kashmiri food preparations.
Read on below to find out how Tehri is done Kashmiri style with of course my adaptations. I am told that Kashmiri cuisine uses mustard oil. This I replaced with ghee.

This recipe also calls for ghee, which is clarified butter that can be purchased in a jar or made at home using your pressure cooker.
A lot of Tehri or rice recipes use ginger garlic paste and potatoes. These I omitted totally in my recipe since I wanted to preserve the fragrance of saffron and get a bit of Haldi (turmeric) flavour.

How to make Saffron Rice or Tehri Recipe; Kashmiri Saffron Rice Recipe (Step by Step)
Ingredients
- 1 Cup Basmati Rice Good quality
- 1.5 Tablespoon Ghee
- 1 Tablespoon Jeera Cumin seeds
- 1 inch Dal Chini Cinnamon Stick
- 2 Piece Laung Cloves
- 1/4 Teaspoon Haldi Turmeric
- 2 Pinch Kesar Saffron
- 2 Tablespoon Milk To soak saffron
- 2 Cups Water
- 0.25 Teaspoon Salt
Instructions
- Soak saffron in warm milk till its mixed well.
- Take one cup of good quality basmati rice and soak for an hour.
- Heat ghee in a pan and season it with jeera, dal chini, and laung.
- Add rice with two cups of water.
- Add saffron and turmeric dissolved in milk
- Bring to a boil and simmer till done.
- Serve hot with the rest of the Kashmiri dishes.
Notes
- Use the best quality possible of basmati rice.
