Ingredients
- 4 piece Large Potato (Maris Piper)
- 4 Cup cold water (for rinsing)
- 2 Cup oil (for frying)
- ½ teaspoon chilli powder
- ½ teaspoon salt
Instructions
- Peel the skin of maris piper potatoes.
- Cut into 1/2 inch thick sticks.
- Soak in ice cold water until the starch runs out clean.
- Pat dry with kitchen towels to remove remaining moisture.
- Heat up the oil on medium heat. Make sure the oil is approximately 150 degree celcius.
- Break into batches and deep fry for 5 minutes or until the potatoes turn tender.
- Drain off over kitchen towel and cool completely.
- When cooled completely, deep fry in hot oil the second time on high heat.
- Stir occasionally and fry until it the fries turn golden brown and crisp.
- Drain off to remove excess oil.
- Sprinkle ½ tsp chilli powder and ½ tsp salt to season the fries.
- Serve hot with ketchup of your choice.
