Having said that most of you know that I am not a boiled egg person. It was an occasion when I was famished and didn’t have much to eat handy. So I boiled eggs succumbed to mashed egg tartine.
The thought was to make a quick and healthy snack that kept me going through the day. Ever since I have made several combinations of such mashed egg tartine.

Turns out, I LOVE boiled and mashed eggs on toast now! Well, I’m in surely love with these Garlic Bread & Egg Tartines and here are a few reasons why you will love them too:

- They are great for breakfast, lunch or whatever or whenever
What I truly adore about these mashed egg tartine (French for open-faced sandwich) is that it doesn’t take much to make them and you only need everyday ingredients. You can use anything and everything that you fancy.
What Bread Should I Use?
Use your favorite loaf. I used a garlic bread and a brown bread for these. The star of the recipe is the egg mash. After you toast them, you can butter them or have them unbuttered. It’s your choice entirely.
However, opt for slices that can stand up to toppings. Dense, nutty multi-grain or hearty slices of miche are suggested.
Toast your bread: Toasting gives the bread sturdy crunch so it won’t get soggy under the toppings.

Ingredients
- 2 Piece Egg Boiled
- 1 Piece Tomatoes Medium
- 1 Piece Onions Medium
- 2 Piece Green Chillies
- 2 Tablespoon Coriander Finely chopped
- 1 Tablespoon Mint Finely chopped
- 3 Tablespoon Caesar Dressing
- 0.25 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
Instructions
- Get your ingredients ready. Boil the eggs.
- Chop the eggs really small.
- Mince the onions and finely chop the tomatoes
- Finely chop green chillies, coriander and mint.
- Add Caesar dressing to the veggies.
- Mix everything in a mixing bowl with a spoon until fully combined.
- Slice the bread and toast the same in your oven or microwave under convection setting.
- Remove to a serving platter once the desired toastiness has been achieved.
- Spoon the egg on the bread slices and sprinkle some coriander on top.
Notes
- Egg salads generally last for 3-5 days when stored in an airtight container in the fridge. So I recommend that you store in the fridge for up to 3-4 days tops and consume by then.
- This herby egg mixture tastes fantastic in sandwiches, wraps, and on top of salads too so don’t limit yourself to just these tartines.
