Heat oil in a kadai and add boiled onion paste. Stir and add garlic paste, ginger, paste, green cardamoms, cloves, & slit green chillies.
Stir and add melon (magaz) and cashew nut paste. Stir & add half cup of water and mix well. Cook on low heat for five to ten minutes.
If you are using mawa in your white curry gravy, you can avoid the magaz and add grated mawa instead at this point.
As the oil separates, add whisked yogurt, salt and white pepper powder. Stir and cook on high till oil separates again. Adjust seasoning and cool the Indian White Gravy.

- 1 Cup Cashew nuts Kaju
- 2 Tablespoon Oil Tel
- 1 Tablespoon Garlic paste Lehsun
- 1 Tablespoon Ginger paste Adrak
- 2 Piece Green cardamoms Hari Elaichi
- 5 Piece Cloves Laung
- 2 Piece Green chillies Hari Mirch, Slit into two
- 1 Tablespoon Melon Seeds Charmagaz
- 0.25 Cup Mawa or Khoya grated (optional)
- 0.5 Cup Yogurt Dahi
- 0.25 Teaspoon Salt Please adjust it to your taste
- 0.5 Teaspoon White pepper powder Safed Mirch Powder
