Goan Classic Chicken Cafreal or Galinha Cafreal
Goa is a popular tourist destination famous for its beaches. It is also popular for its distinctive food and culture. The long reign of Portuguese left an inevitable influence on the Goan food and this chicken cafreal is just another example of the same!
Galinha cafreal is a fried chicken dish which is dominated by fresh cilantro. The rich green colour of the Galinha cafreal comes from the spice paste made with fresh coriander leaves and lots of Indian spices.
Goan cuisine has this amazing ability to combine all kind of flavours perfectly.

Chicken or Galinha Cafreal recipe is a really classic Goan dish. It is one of the so few dishes made in India with a lovely green curry paste. The paste is a wonderful blend of aromatic spices that I am almost sure that your senses will jump with excitement.
There are a lot of delicacies which are a must-try if you want to get a grasp of the Goan cuisine. Since I travel to Goa often, this food has become my second staple after North Indian. And, Chicken Cafreal is one such speciality without which a Goan festive feast is not complete.
It is believed that this dish originated from Portuguese colonies in the African continent. It was introduced into the Goan cuisine by the Portuguese and the African soldiers serving under the Portuguese.
Galinha Cafreal is actually made very spicy with a lot of dry spices and chillies. This is presumably because of the hot weather.
My son, Sidhant had seen a food show on television where Chicken Vindaloo was being made and he requested me to make the same for him. Unfortunately, I was out of dry red chillies that give vindaloo that deep red colour but had some fresh green chillies.
Hence, I decided to make Chicken Cafreal instead. I also took the classic routine that involved marinating the chicken overnight. If you don’t have much time, you can maybe marinate it for an hour. Sidhant was super happy with what turned out and I was too.

Chicken Cafreal Recipe, Goan Galinha Cafreal Recipe
Ingredients
- 500 Grams Chicken Boneless breasts cut into cubes
- 2 Piece Onion Medium-sized Sliced
- 4 Tablespoons Cafreal Paste
- 0.5 Teaspoon Salt
- 2 Tablespoon Oil/Ghee
Instructions
- First of all, marinate the cleaned and cubed chicken overnight with some salt and two tablespoons of cafreal paste.
- Heat a tablespoon of ghee in a thick bottomed pan and fry the sliced onions. When they are translucent remove from fire and cool (this is a tip I learnt from the food show).
- Once onions cool down put them on flame again and add the remaining cafreal paste. Saute for a minute.
- Now add the marinated chicken and sear on high to seal the juices. This takes about 5 minutes.
- Reduce flame to medium-low and cook covered till done. This takes about 20-25 minutes.
- Remove from flame and check the seasoning.
- Finally, serve it with pao bread, Goan bread called poee or plain rice.
Notes
- If using frozen chicken, take the marinated chicken out from the refrigerator at least an hour before you start cooking.
