Kokum is a small fruit like a cherry tomato, red in colour that deepens to purple on ripening.
Before putting to culinary uses it is often dried though it remains a bit sticky after drying up. It has a sour taste with a faintly sweet aroma.

Now that we are done with kokum syrup, let us get cracking at making some kokum sherbet.
Kokum juice is a great way to destress yourself when the Sun is right on your head, and you need to cool off.
Kokam Juice is a refreshing and rejuvenating. You can even garnish it with a few mint leaves. The recipe below has mixes made with both water and soda.
I usually make it with soda water and ice, though you can make it with whatever you prefer.

Beyond its refreshing, tangy flavour that has made it a staple in the coastal kitchens of Goa and Maharashtra, Kokum (Garcinia indica) is a medicinal powerhouse.
Often referred to as “The Indian Butter Tree,” it has been used in Ayurveda for over 2,000 years to balance internal heat and support metabolic health.
In 2026, kokum has gained global recognition as a “functional food” due to its high concentration of Hydroxycitric Acid (HCA) and Garcinol.

- 60 ml Kokum Syrup
- 4 Cups Water or Soda

Instructions

- Adjust the quantity of the kokum syrup to suit your taste.
