Sum Ka Mutton Recipe – A Delicious No-Fuss Mutton Recipe
This simple, yet delicious version of goat curry or mutton curry recipe called Sum Ka Mutton is really easy to put together.
And, you can use either goat meat or sheep. Sum Ka Mutton curry is delicious by itself and when served with plain rice, a salad, and raita.

Sum ka Mutton is a unique mutton curry recipe developed by me. It is rustic and decadent. There is no precedent for such a delicious mutton/ lamb recipe till now.
I wanted a mutton dish that was no fuss and quickly made. So I began to play around with some raw ingredients available at home and got Sum Ka Mutton as a final result.
There are a few unique things about this mutton curry recipe. It doesn’t use any water. It uses water content from the meat and a lot of tomatoes that I use in it.
Second, it uses a lot of fresh coriander that imparts its freshness & deliciousness to the dish.
Third, it is pressure-cooked after a bit of bhuno, which saves a lot of time from range to the table.

| Garlic | 8 Cloves | |

| Red Chilli Powder | 1/2 tsp | |
| Turmeric Powder | 1/4 tsp | |
| Fresh Coriander | Chopped | Two bunches (save some for garnish) |
| Salt | 1.25 tsp |

The Process to make Sum Ka Mutton
- Clean and dry mutton pieces.
- Pierce tomatoes with a fork all over.
- Heat ghee or clarified butter in a wide pressure cooker.
- Add dry spices, including cumin seeds, bay leaves, cinnamon, cardamom, peppercorns and dried red chilis to hot ghee till the spices release their aroma.
- Reduce the heat & place the whole but pierced tomatoes in the pressure cooker.
- Add chopped coriander to the tomatoes.
- Add powdered masalas and cook till they are fragrant.
- Add mutton & salt and fry or bhuno slightly.
- Put the lid on the pressure cooker and put the heat on high.
- Remove from fire after 5 whistles and let the pressure go by itself.
- Mash the tomatoes nicely before putting in a serving bowl.
- Garnish with reserved chopped coriander and serve hot with jeera rice & onion tomato raita.

सुम का मटन बनाने के लिए सामग्री।

| हरा धनिया | बारीक कटा हुआ | दो गड्डी (थोड़ा सा सजाने के लिए बचा लें। |

सुम का मटन बनाने की विधि।
- मटन या गोश्त के पीस धो कर सूखा लें।
- टमाटर में एक काँटे से छेद कर लें। हरा धनिया बारीक काट लें।
- घी को प्रेशर कुकर में गरम कर लें।.
- सारे सूखे मसाले, ज़ीरा, तेजपत्ता, दालचीनी, इलाइची, काली मिर्च और सूखी लाल मिर्च को भून लें।
- आँच धीमी करके टमाटरों और हरे धनिए को प्रेशर कुकर में डाल लें।
- अब हल्दी और लाल मिर्च पाउडर डाल लें।
- मटन या गोश्त को प्रेशर कुकर में डाल लें और हल्का भून लें।
- प्रेशर कुकर का ढक्कन लगाकर उसको ५ सिटी दें।
- प्रेशर को अपने आप निकालने दें।
- अगर मटन पक चुका हो तो हांडी में निकाल कर टमाटर को अच्छे से पिचका लें।
- सुम का मटन टायर है। इसको थोड़े हरे धनिए से सज़ा लें और ज़ीरा पुलाव और प्याज़ टमाटर के रायता के साथ गरमागरम परोसें।

Serving Suggestions for Sum Ka Mutton
- It pairs well with all Indian bread such as tandoori roti, butter roti and even garlic naan.
- If you increase the gravy, you can pair it wonderfully with plain or jeera rice.
- Throw in aloo ka raita on the side with a green salad and your meal is complete.
Variations and/or Additions
- Just as my Dad likes it, you may also want to add some potatoes to it.
- A garnish with garam masala will enhance the flavour of Sum Ka Mutton further.
