Lauki Raita or Bottle Gourd Raita Recipe – A Super Healthy Raita
Lauki Raita is immensely flavourful, healthy and refreshing raita using grated bottle gourd and yoghurt with a few spices.
This vegetable raita is very easy to make and is a perfect accompaniment to any meal especially with rice.
Traditional western condiments like salt, pepper, mustard and horseradish that make dishes spicier.
On the other hand, a dish of dahi or raita has a cooling effect to contrast with spicy curries and kebabs that are the main fare of some Asian cuisines.

Lauki Raita Recipe or Bottle Gourd Raita Recipe - Step by Step
Keep grated lauki in steamer or pressure cooker and cook. (around 15-20 min)
In a mixing bowl, whisk the yoghurt.
Add steamed lauki to the yoghurt and mix it.
Now add cumin powder, black salt, salt, green chilli, and coriander leaves. Mix it well.
Serve as a side dish with your meal or serve with biryani.

|Red Chilli Powder||For garnishing||1/4 Teaspoons|

|लौकी या घिया||कतरा हुआ||१ कप|
|लाल मिर्च पाउडर||१/४ चोटा चमच|
|काला नमक||१/२ चोटा चमच|
|ताज़ा धनिया पत्ती||चोटी कटी हुई||१ बड़ा चमच|
|जीरा पाउडर||आधा चोटा चमच|
- Get your ingredients ready.
- Grate and boil the bottle gourd or lauki.
- Whisk the yoghurt till smooth. If you feel that the yoghurt is too thick, you can add 4 tablespoons of milk to it
- Add lauki to the yoghurt and mix well.
- Add salt, black salt and cumin powder to the yoghurt and mix well.
- Garnish with red chilli powder and chopped coriander leaves.

- दही को चिकना होने तक फेंटे। अगर आपको लगता है कि दही बहुत गाढ़ा है, तो आप इसमें ४ बड़े चम्मच दूध मिला सकते हैं
- दही में लौकी डालें और अच्छी तरह मिलाएँ।
- दही में नमक, काला नमक और जीरा पाउडर डालकर अच्छी तरह मिलाएं।
- लाल मिर्च पाउडर और कटी हुई धनिया पत्ती से गार्निश करें।
- खाने के साथ परोसें।

Lauki raita can be served chilled with Aloo Gobi, Dal Makhani, Chicken or Mutton Curries and of course, the Biryani. It is also a great accompaniment for parathas and rotis.
