Tomato rice is a popular rice recipe from Southern part of India. And is usually made with leftover rice. Since there is something always leftovers from various meals & if you are creative, you can mix stuff and end up making something out of nothing.
Whatever said and done, this rice dish tasted fresh and delicious. You can always use my tamatar rice recipe as a quick snack or a snappy tiffin lunch. It is incredibly simple to make and kids love it too.
How do you make tomato rice?
However, in this particular case, I cooked rice fresh and used leftover tomato juice to make tamatar rice.
As you can see, I was still using something leftover. And I guess it is the first with tomato juice.
Tomato rice is a simple South Indian rice dish made with lots of tomatoes & spices. It is not a traditional dish, so each home or region has their own recipe for making it.
As the name indicates, this tamatar rice is made with tomatoes alone and no other vegetables are added except onion.
But you can use any vegetables like peas, potatoes, etc., and even soya chunks or boiled egg go well.
Is tomato rice recipe vegan?
Yes! this easy tamatar rice recipe is a super simple, yet a great recipe for vegans too. All you have to do is not use any ghee while cooking it. Simply use your favourite vegetable oil.
Can I use regular rice for easy tomato rice recipe?
Yes! You can use any kind of rice you like you wish for this lunch rice recipe. I prefer basmati rice – an aromatic long grain variety, but short grain or even brown rice could be used. Be sure to increase cook time for brown rice.
Do I make tomato rice with fresh or leftover rice?
To make tomato rice recipe, you can use any kind of cooked or steamed rice. And you can also make tamatar rice with freshly made rice as I did in this case. All you need to ensure is that the grains are well separated.
What do I use for tempering tomato rice recipe?
Simply add 2 tablespoons ghee or oil to a hot pressure cooker or a pot. Add cashew nuts and fry them until golden and crisp. Remove to a plate and then regulate the flame to low.
Add 1 inch cinnamon, 3 cloves, 1 bay leaf, 3 green cardamoms and 1/2 teaspoon cumin. If you do not have bay leaf you can use curry leaves. If you do not have all or any of these whole spices, just skip them.
How do you serve tomato rice?
This tomato flavoured rice is delicious. It has the tang from the tomatoes and the dal gives it a nice crunch. If you ever are looking for a simple and snappy home cooked vegetarian meal, then you must make this dish.
It needs only basic ingredients that are easily available in the pantry and is very easy to make. Being a rice dish, it makes one hearty meal that can be enjoyed for lunch or dinner.
You can serve it with a variety of curries (meat, fish or vegetarian) would be perfect accompaniments to your rice. Moreover, add some raita and papad with it and it becomes a wholesome meal.
How long does tomato rice last in the fridge?
Tomato rice will last in your fridge anywhere from four to seven days, if there is any left from the meal that is.
To make tomato rice recipe, you can use any kind of cooked or steamed rice. And you can also make tomato rice with freshly made rice as I did in this case.
All you need to ensure is that the rice grains are well separated.
You can also add a few roasted peanuts to it (which I didn’t, though I added chana dal). You can snack on it or have it as lunch. By far, tomato rice is a splendid recipe loved by all. My 4-year-old niece absolutely loved it.
You can relish tomato rice with a sabzi or just like that. I served it with some plain curds. If you wish, you can pair it with some raita, papad & a green salad.

Tomato Rice Recipe; Make Tomato Rice with Fresh or Leftover Rice & Tomato Juice
Ingredients
- 1 Cup Basmati Rice
- 2 Cup Tomato Juice
- 1 Tablespoon Vegetable Oil I used Canola Oil
- 1/2 Teaspoon Mustard Seeds
- 3 Piece Dried Red Chillies
- 1 Teaspoon Coriander Seeds
- 1/4 Tablespoon Asafoetida Hing
- 1 Teaspoon Chana Dal
- 1 Teaspoon Cumin Seeds Jeera
- 10 Piece Curry Leaves
- 2 Teaspoon Table Salt
Instructions
- First of all, get your ingredients ready.
- Then in a pressure cooker, add the soaked and drained rice, salt and tomato juice and put the lid on.
- Now pressure cook this till you get two whistles. Remove from fire and let the pressure release by itself.
- Second, take a frying pan and dry roast red chillies, coriander seeds, cumin seeds and chana dal. When they change colour, remove from flame and set aside.
- In the same pan add canola oil and hing. After few seconds add mustard seeds, curry leaves and the roasted spices.
- When they crackle, add the mixture to tomato rice already done and mix well.
- Keep covered for 4-5 minutes for flavours to blend.
- Serve with papad, chutney, raita or just eat it as it is.
टमाटर वाले चावल या टमाटर चावल
Ingredients
- १ कप बासमती चावल
- २ कप टमाटर का जूस
- १ बड़ा चमच कनोला तेल
- १/२ छोटा चमच काली राई
- ३ नग सूखी लाल मिर्च
- १ छोटा चमच धनिया के बीज
- १/४ छोटा चमच हींग
- १ छोटा चमच चना दाल
- १ छोटा चमच जीरा
- १० नग करी पत्ता एक डाली
- २ छोटे चमच नमक
Instructions
- सारी सामग्री एकत्रित कर लें।
- प्रेशर कुकर में भिगोए हुए चावल, नमक और टमाटर का जूस डाल लें।
- इसको दो सीटी तक पका लें और अलग रख लें।
- फ़्राइइंग पैन में सूखी लाल मिर्च, धनिए के बीज, ज़ीरा और चना डाल को सूखा भून लें और अलग रख लें।
- इसी पैन में कैनोल का तेल गरम करें और हींग को हलक भून लें। अब इसमें काली राई, करी पत्ता, और सूखे भूने हुए मसाले डाल लें।
- भून जाने पर इस मिश्रण को पके हुए टमाटर वाले चावल में मिला लें।
- ४-५ मिनट तक ढक के रखें ताकि स्वाद अच्छे से घुल मिल जाए।
- पापड़, रायता, चटनी इत्यादि के साथ परोसें।.
