Are cucumbers a fruit?
You may have heard that tomatoes are a fruit and not a vegetable. Well, cucumbers fall under that same umbrella. What? Tomatoes were sure a surprise way back when I heard this bit – but at least they are sweetish, round and colourful.
Cucumbers were quite a shocking revelation to me as there is nothing remotely fruity about cucumbers, however, they are actually a fruit. Really! They contain seeds and grow from the ovaries of flowering plants which is the definition of a fruit.
Does this make all vegetable males? I’m too afraid to ask so I’ll let it go and suppress the archeological inquisitiveness in me.
However, cucumbers are members of the plant family Cucurbitaceae, which also makes them related to squashes and melons.
Cucumber Ribbons Salad Recipe – A Really Light & Refreshing Salad
Cucumbers pair well with so many things: hummus, ranch dressing, salmon. They get wonderfully incorporated in Lemon, Cucumber & Cilantro Infused Water.
But there is more to a cucumber than just water which makes them really hydrating and great to eat in summer. Cucumbers also contain Vitamins B1, B2, B3, B5, Folic Acid, Calcium, Vitamin C, Iron, Magnesium, Phosphorus, Potassium, and Zinc.
I could go on, but let’s talk about this Cucumber Ribbons Salad!
Enjoy this scrumptious & refreshing salad on its own or with your favourite meat dish. I paired this recently with my chicken cordon bleu recipe and the results were outstanding.
Cucumbers are 19% water and contribute just 16 calories. They are a rich source of vitamin K and form a part of the daily salad in an Indian meal.
Are you a lover or a hater or cucumbers? Cucumbers have a reputation for being boring. I don’t agree and neither does my 7-year old niece but my son agrees.
I love cucumbers and this salad, which is refreshing and definitely not boring, brings it!
There is a bit of a kick and crunch with added jalapeños, lemon zest and pistachios. Topped with fresh pepper and a drizzle of orange vinaigrette and you have a taste sensation.
This salad is a delicious and a hydrating accompaniment to any meal. Enjoy the freshness of cucumbers and orange. It’s delightful.

A Note by Cucumbers :-)
If you don’t have a spiralizer with a ribbon attachment, you could easily use a vegetable peeler to simply peel the cucumber into thin strips.Cucumbers have a lot of water which makes them a super healthy snack but in salads, they continue to release water so this salad should only be made just before needed. Otherwise, it will be sitting in a pool of water.
To store any leftovers, simply pour off the excess water before refrigerating. Toss the salad with a bit more vinaigrette and fresh mint to refresh it when you want to eat.
